Irish Stew
1 lb. cubed beef
browned in olive oil and flour in a frying pan
add 1 lb. button mushrooms and saute
put it is a large stock pot
add some carrots, pearl onions, celery, frozen peas
a bouquet garni (a bundle of fresh thyme, parsley, rosemary tied with a cotton string)
1 teaspoon dry mustard
6 cups of beef stock or broth
cook on low until the carrots and celery are al dente'
(here's the Irish part)
add one pint of Guinness, allow to simmer for a bit (the alcohol will simmer out but the flavor will remain)
Serve with Irish soda bread.
It is better the second day so it's good to make it on the 16th and reheat.
