roasting chilies

I am roasting chilies for the first time and found this helpful site:

That’s a great how to.  I go through two bushels of chilies a year and so roasting my own really increases the carbon footprint.  Instead I go to a chilie roaster located at 52nd and Sheridan.  When I get my big bag of freshly roasted chilies home I let them sit for an hour or so in the large plastic bag.  Then I bag them up in quart ziplocks (6 chilies to a bag), skin and all.  I store them in the freezer and defrost, skin and seed (or not seed)  them as needed during the year.  Some folks skin and seed them before bagging and freezing, either way works fine.
A word of caution to the un-annointed.  Wear food gloves when handling the chilies and do not touch your eyes or other sensitive skin areas until you have thoroughly washed your hands!

Roasting Chilis

Harlander, wither thou lives, you may be smelling chilis roasting, probably tomorrow, wafting through the air, and that wonderful aroma will be coming from the corner of 22nd & Kendall. I don't worry about carbon imprints, footprints, or air pollution because I don't do that many. Just a few bagsful, not the bushel quantities you speak of. Have a great day.

There's nothing like going to the farms for your chile rather than going to a stand in the city.  I made my annual chile pilgrimage to Pueblo last weekend.  I took orders from my friends and we came home with 14 bushels.  My wife and I sat outside and peeled and bagged our two bushels and put them to sleep in the freezer until needed.  
The 14th Annual Chile and Frijoles Festival will be held in Pueblo September 19-21 on Union Ave.  If you've never been to it, you're missing out. You can smell the chiles roasting for blocks.  I'll definitely be there.

Benefit

With all the chile afficianados on Edgewater, maybe we should consider a chili cook off  benefit for the fire department next fall.

Guess who just froze 13 bags of freshly roasted hatch chilies?  Take a whiff of the air around upper Edgewater, as my husband is making a batch of green chili as I write this.    YUMMMMMMMM. lk

the smell of ?????

Well, if you smell a certain roasted chili smell coming from a van driving around town, follow it as that will lead you to the who. Anyone know how to get the smell of roasted hatch chilies out of my car? It's been almost a week since we brought the freshly roasted peppers home.  Love the chili when its being made and when we are eating it, but to be honest the odor in my car is starting to have a bit of a yuk factor to it.  Wait, hold on, there seems to be some man lurking around my car with a six pack of Colt. What the heck????  Gotta go.................

Aroma therapy

Damn!  Can't a man get a whiff of chile without the whole town knowing about it?  Why the hell would anybody wan't to get rid of that chile aroma?  Somebodies nose is just a bit to damn sensitive.
